Farmer's Market Beef & Barley Soup

Do I hear a collective "Mmmmmmm"?  Imagine fresh veggies from your local Farmer's Market in each savory bite, perfuming the air with vitamin-rich goodness.


If you're not a genius in the kitchen then we have something in common, don't worry.  This one is as simple as frying up some hamburger meat and throwing the rest of the ingredients in a pot to cook.  


Mom made this the other night and it was delicious with a slice of crispy, thick, home-baked cornbread.  


Here's the recipe:

  • 2 16oz cans ready-cut tomatoes (we used the same equivalent in home-grown tomatoes)
  • 1 8oz can tomato sauce
  • 6 cups water
  • 1/4 cup ketchup
  • 4-5 beef bouillon cubes
  • 3/4 cup barley
  • 2 bay leaves
  • 1 cup celery, chopped
  • 1 cup carrots, chopped
  • 1 large onion, diced
  • 1/3 cup peas, frozen
  • 1/3 cup corn, frozen
  • 1/2 cup zucchini, chopped
  • salt & pepper to taste
  • 2 cups hamburger, cooked

Fry up your hamburger meat and toss it and all other ingredients into a large pot.  Cook it on low-medium heat until barley is cooked and vegetables are nicely tender.  Ladle into bowls and enjoy the comforting richness!
